RIVERVIEW RECIPE: Spinach Salad

INGREDIENTS:

1/3 cup celery, finely chopped

1/3 cup onion, finely chopped

2 hard-boiled eggs, diced

1/2 cup cheddar cheese, cubed

2.5 cups spinach, torn into bite-size pieces

 

Combine first four ingredients. Add spinach and toss.

 

DRESSING:

2/3 cup mayonnaise

1 tsp. vinegar

1/4 tsp. Tobasco sauce

1/4 tsp. salt

2.5 Tbsp. horseradish

 

Mix well. Add to salad just before serving.
