RIVERVIEW RECIPE: Souffle Pancakes



6 Tbsp. buttermilk pancake mix

1/2 tsp. salt

6 egg yolks, beaten well

6 Tbsp. sour cream

6 egg whites, beaten stiff but not dry




Place dry pancake mix and salt into a mixing bowl. Add beaten yolks and sour cream; mix just enough to blend. Carefully fold in beaten egg whites. Drop on a lightly greased hot griddle or electric skillet at 350 degrees.




Beat two 10 ounce packages unsweetened strawberries (or blueberries) with 1.5 cups sugar until sugar is dissolved.
