Riverview Recipe: Smoked Quail

Smoked Quail

For 12 birds:

Salt and pepper birds. Wrap each bird with ½ strip bacon, securing with a toothpick. Place birds in pan and pour the following marinade over them:

1 c. Wesson oil

¼ c. wine vinegar

¼ tsp. garlic salt

2 tbsp. Worcestershire

2 tbsp. soy sauce


Blend well. Marinate overnight. Smoke 2 to 3 hours per instructions that come with your smoker on small game.
