Riverview Recipe: Potatoes Au Gratin

POTATOES AU GRATIN

 

Ingredients:

 

8 lg. potatoes, diced and cooked

6 Tbsp. butter

6 Tbsp. flour

3 c. milk

1 cup chopped onion

½ c. chopped green pepper

 

Directions:

 

Melt butter and sauté onion and green pepper. Mix with flour and milk to make white sauce and cook until it begins to thicken. Add 1 ½ c. grated cheese, salt and pepper to taste, and parsley flakes. Put potatoes in casserole dish and pour white sauce over. Top with grated cheese and paprika. Cook in 300-degree oven for 30 minutes. Serves 20. A family favorite!
