Riverview Recipe: Overnight Salad



1 head cauliflower
1 head lettuce
1 medium onion
1 lb. bacon, cooked and crumbled
1/2 c. parmesan cheese
1 c. mayonnaise


Finely chop cauliflower, lettuce and onion. Mix together. Add mayonnaise to top of mixture, but do not mix. Add 1/2 cup parmesan cheese and bacon, again do not mix – just layer. Add salt and pepper to taste. Cover tightly and refrigerate overnight. Mix when ready to serve. Serves 18-20. Easy, yet delicious!
