Riverview Recipe: Oatmeal Cookies

Oatmeal Cookies

½ c. margarine

1 c. brown sugar

2 eggs

1 tbsp. vanilla

2 c. quick oats

2 tsp. baking soda

½ c. Crisco

1 c. white sugar

1 tsp. baking powder

2 c. flour

2 c. coconut


Cream shortening and sugar. Add eggs. Sift together the flour, soda, baking powder and add to mixture. Stir in oatmeal, coconut and vanilla. Drop by teaspoon-fuls on cookie sheet. Bake at 325 degrees for 10-15 minutes (should be golden brown). Cool on cake rack.
