3 fresh, large tomatoes
1/3 cup Wesson oil
¼ cup red wine vinegar
1 tsp. salt
¼ tsp. pepper
½ clove garlic, finely chopped or crushed
2 tbsp. parsley, snipped
1 tbsp. onion, finely chopped
- Slice tomatoes ½ inch thick. Place in single layer in large shallow serving dish.
- In small jar mix oil, vinegar, salt, pepper and garlic. Cover tightly and shake well.
- Pour over tomato slices, Sprinkle with parsley and onion. Cover and refrigerate 1-3 hours before serving.
