Riverview Recipe: Marinated Sliced Tomatoes


3 fresh, large tomatoes

1/3 cup Wesson oil

¼ cup red wine vinegar

1 tsp. salt

¼ tsp. pepper

½ clove garlic, finely chopped or crushed

2 tbsp. parsley, snipped

1 tbsp. onion, finely chopped



  1. Slice tomatoes ½ inch thick. Place in single layer in large shallow serving dish.
  2. In small jar mix oil, vinegar, salt, pepper and garlic. Cover tightly and shake well.
  3. Pour over tomato slices, Sprinkle with parsley and onion. Cover and refrigerate 1-3 hours before serving.
