RIVERVIEW RECIPE: Mama Rube’s Tomato Salad

MAMA RUBE’S TOMATO SALAD

 

INGREDIENTS:

1 – 16 oz. can tomatoes

1 small can deviled ham

2 cups finely grated cheese

1 small onion, finely chopped

1 or more stacks crushed saltines

3 or 4 Tbsp. mayonnaise

salt and pepper to taste

 

DIRECTIONS:

Run tomatoes through sieve to remove seed and pulp. Add deviled ham, onions, cheese and enough saltines to take up all the moisture. Add mayonnaise. (Can adjust mayonnaise and crackers to obtain desired consistency.) Chill several hours.
