Riverview Recipe: Lazy Daisy Cake





2 eggs

1 c. flour

1 c. sugar

1 heaping tsp. baking powder

¼ tsp. salt

½ c. milk, heated

1 Tbsp. butter, melted in milk

1 tsp. vanilla




Beat eggs, add sugar and vanilla. Add sifted dry ingredients and beat well. Add milk and beat about 12 strokes. Grease, but do not flower pan. Bake in 7- or 9-inch square pan 20-25 minutes at 350 degrees. Slightly cool in pan.


Top with: 6 Tbsp. butter and 10 Tbsp. brown sugar, melted. Stir in 1 box coconut, 4 Tbsp. cream and a few drops almond flavoring. Brown under broiler.
