1 large squash cut into round, thin slices
2 eggs, well beaten
1 cup milk
1 tbsp. seasoned salt
Pepper to taste
Flour or cornmeal
- Mix eggs, milk and seasoned salt with pepper. Dip each squash slice in mix, then roll in flour.
- Drop each slice in hot cooking oil and cook until brown.
*Variation: Peeled eggplant can be prepared the same way.
