Riverview Recipe: Fried Squash


1 large squash cut into round, thin slices

2 eggs, well beaten

1 cup milk

1 tbsp. seasoned salt

Pepper to taste

Flour or cornmeal



  1. Mix eggs, milk and seasoned salt with pepper. Dip each squash slice in mix, then roll in flour.
  2. Drop each slice in hot cooking oil and cook until brown.

*Variation: Peeled eggplant can be prepared the same way.
