Riverview Recipe: Coconut Pie

Coconut Pie

1 ¼ cup sugar

3 eggs

1 stick margarine or butter, melted

1 (3 ½ oz.) can coconut

¼ cup milk

1 tsp. vanilla


Mix pie by hand instead of using electric mixer. Beat eggs well. Add sugar and all other ingredients and mix well. Pour into unbaked 9 inch pie crust and bake 50 or 60 minutes in 325 degree oven.
