1 can diced beets
1 cup orange juice
1/3 cup seedless raisins
¾ tbsp. salt
¼ cup sugar
2 tbsp. cornstarch
2 tbsp. beet liquid, reserved from can
1 tbsp. lemon juice
1 tbsp. butter
- Drain beets, while reserving liquid for later use.
- Combine orange juice and raisins. Heat to boiling.
- Mix salt, sugar, cornstarch. Add beet liquid and stir to a smooth paste. Add orange juice.
- Cook stirring constantly until think and clear.
- Add lemon juice, butter and beets. Heat and serve.
