Riverview Recipe: Beets in Orange Sauce


1 can diced beets

1 cup orange juice

1/3 cup seedless raisins

¾ tbsp. salt

¼ cup sugar

2 tbsp. cornstarch

2 tbsp. beet liquid, reserved from can

1 tbsp. lemon juice

1 tbsp. butter



  1. Drain beets, while reserving liquid for later use.
  2. Combine orange juice and raisins. Heat to boiling.
  3. Mix salt, sugar, cornstarch. Add beet liquid and stir to a smooth paste. Add orange juice.
  4. Cook stirring constantly until think and clear.
  5. Add lemon juice, butter and beets. Heat and serve.
