Riverview Recipe: Angel Biscuits

6 c. self-rising flour
1/3 c. sugar
¼ tsp. salt
1 tsp. baking soda
1 c. shortening
2 pkgs. (1/4 oz. each) active dry yeast, dissolved in ¼ c. lukewarm water
2 c. buttermilk


Preheat oven to 450 degrees. Sift flour, sugar, salt and baking soda together. Cut in shortening. Add yeast and buttermilk. Knead well. It may be necessary to knead in more flour. Cut out biscuits and bake 10-12 minutes. Dough may be covered and refrigerated for a week. Note: dough does not have to rise before baking. If using plain flour, add 1 tbsp. baking powder.
