Riverview Recipe: Ambrosia

15 to 18 medium-size oranges
1 c. sugar or to taste
1 ½ c. fresh, canned or frozen grated coconut
1 can (13 ½ oz.) crushed pineapple, not drained (optional)


Peel oranges, being careful to remove all white membrane. Cut into small slices or pieces. Mix oranges and juice with sugar. Add coconut and pineapple. Place in refrigerator to chill. Note: add more or less sugar to taste, depending on sweetness of fruit. Serves 10-12. A Southern favorite!
