Country Style Dove
INGREDIENTS
6 or 8 doves
flour
6 slices bacon
salt and pepper
1 ½ c. heavy cream
2 tsp. chopped parsley
DIRECTIONS
Flour birds lightly. Cook bacon in large skillet. Remove and keep warm. Sauté doves in the bacon fat, browning well on all sides. Reduce heat and continue cooking until doves are tender, about 15 minutes. Remove doves to platter. Season to taste. Spoon our all but 3 tbsp. fat. Add 4 tbsp. flour and blend well. Cook 3 minutes. Gradually stir in cream and cook, stirring, until smooth and thickened. Season with salt and pepper, and add chopped parsley. Garnish doves with bacon.
